Oak & Vine is the evening restaurant at Oaks Cypress Lakes Resort in Pokolbin, and it does something unusual for the Hunter, a Sri Lankan-inspired menu built on classical French technique. It is billed as a smart dining experience, with dishes running to coconut roti and chilli onion sambal to start, or Ceylon tea smoked duck with roasted beetroot emulsion. You can eat alfresco looking over the pool and the resort's manicured grounds, or head indoors for a pre-dinner drink at the bar. The menu comes from executive sous chef Vinura de Silva, who draws on his French training.
It serves dinner only, Thursday to Saturday, on a set a la carte menu priced at $79 for two courses or $95 for three. As the resort's more formal room, it suits a booked dinner out rather than a casual drop-in. Its sister venue, Cypress Lakes Bistro & Bar, covers breakfast, lunch and the rest of the week. Book ahead for a table.
