Baume is the dining room at Ben Ean, the historic Pokolbin estate that grew out of Dr Henry Lindeman's first Hunter plantings. The kitchen keeps it unfussy: steaks, seafood, pasta and seasonal salads built from local growers, with a wine list drawn from the estate's own Still House range alongside Petersons and Savannah Estate. It sits within a working cellar door that tastes daily, so a meal folds into a wider visit to Ben Ean.
Lunch is served Monday, Friday, Saturday and Sunday, and Friday and Saturday are the only nights the kitchen opens for dinner, closing Tuesday to Thursday. A midweek visit needs checking first. Set menus apply to groups of eight or more, there are no split bills, and a surcharge of 10 per cent applies on Sundays and 15 per cent on public holidays.
