The Hunter Valley Cheese Company makes its cheese on the premises on McDonalds Road at Pokolbin, and sells it from a factory store stocked with local produce and picnic supplies, with a window onto the make room. Book a seat in the tasting room and you are guided through five artisan cheeses with housemade accompaniments for $26.50, or the same five matched to wine and chocolate for $56.50 over an hour. A shared cheeseboard is $34 if you would rather graze than sit a formal tasting.

A few Saturdays a year a cheesemaker of thirty years runs a two-hour hands-on workshop for $200, where you make cheese, taste a flight of eight while yours ripens, and take two of your own home with a starter kit. The store trades seven days from 9am to 5.30pm. Walk-in tastings run daily but capacity is tight in busy periods, so pre-book online to be sure of a seat.
