Botanica is the dining room at Spicers Vineyards Estate on Hermitage Road, a glass-walled pavilion set on lawn under old gums with the vineyard beyond. The kitchen cooks modern Australian and works closely with local producers, so the menu moves with what the Hunter is growing. The wine list draws on the estate's own cellar, with a cocktail list alongside it.
Lunch runs Saturday and Sunday from noon and dinner Wednesday through Sunday from 5.30pm, and a sample menu is published on the site if you want to look before you book. Reservations are required, with a 50 per cent deposit on exclusive group bookings and a full charge for cancellations inside 24 hours.
