Hope Distillery opened in 2020 as the spirits arm of Hope Estate on Broke Road at Pokolbin, turning Australian grain into vodka, gin, moonshine and whisky in small batches. The whisky is the slow end of the range, years in barrel, while the vodkas and gins come round faster. Tastings run at the estate cellar door, so you can line the spirits up against Hope's wines in the one visit. That makes it an easy stop for a mixed group where not everyone is there for wine.

The cellar door opens Wednesday to Sunday, 10am to 5pm and until 4pm on Sundays, so plan around a Monday or Tuesday closure. Walk-ins are fine for a tasting; there is no published price, so ask at the counter or call (02) 4993 3555 first. Spirits are sold to over-18s only. It sits in the thick of the Pokolbin cluster, a short hop from Broke Road's wineries.
