Tower Whiskey Distillery began distilling at Pokolbin in 2021, on the Tower Estate site that Len Evans and friends built in the late 1990s, and the Spanish-revival buildings still stand. The single-malt mash is double distilled in a traditional copper still, aged in used wine and spirit casks, then finished in new or speciality oak. The thing to book is the Whiskey Flight: four small-batch single malts, including releases finished in Malbec, Shiraz and fortified-wine French oak. That is two standard drinks in all, hosted with the story behind each one.
The flight is $40 a head pre-booked or $45 as a walk-in, and walk-ins are taken subject to space. It is an over-18 room, and only those who have paid for the flight take part. The door is open seven days from 11am, on the corner of Halls and Broke Roads among the Pokolbin cellar doors. Distillery tours are advertised as coming soon, so ask when you book.
