Pokolbin Distillery opened in November 2019 and makes everything in house, running a base spirit in small batches through copper pot stills across three generations of distillers. The range leans on the family's Polish heritage and Australian native botanicals: four gins, three vodkas and a long list of liqueurs. Among the gins is a butterfly-pea Blue Island that shifts colour with whatever you pour over it. Tastings are hosted one group at a time at the copper-topped bar, poured in the distillery's own glasses over about forty-five minutes.
The distillery door opens Thursday through to Monday and closes Tuesday and Wednesday, so it is not an any-day stop. No tasting price is published, so call the door on 02 4040 3036 to book and confirm the cost. It sits on Broke Road in the middle of the Pokolbin cluster, which makes it an easy add to a day already out among the cellar doors.
