Gundog pours in the old Pokolbin Schoolhouse on McDonalds Road, where the tasting bench sits under a chandelier and a wine wall runs the length of the room. Matt Burton keeps the focus narrow and deliberate: Semillon, Shiraz and Riesling drawn from the Hunter, Hilltops and the Canberra District, poured in Riedel glassware alongside museum releases that rarely leave the cellar, with Tempranillo, Grenache and Sangiovese widening the range.
The tasting price is not published, so check when you book. A gourmet pantry sits beside the bar for anything you want to take home with the bottles, and the verandah and deck take dogs. It is a carbon-neutral business that has planted more than 3,000 native trees around the estate. The cellar door opens seven days, 10am to 5pm, closed only on Christmas Day, Boxing Day, New Year's Day and Good Friday.
