Peterson House does one thing: sparkling wine, more than thirty of them, made by the traditional method after Ian Peterson found nobody in New South Wales would produce his in small volumes. The base wines are the Champagne grapes, Pinot Noir, Chardonnay and Pinot Meunier, and the range runs from crisp through to sweeter styles.

Tastings are five sparkling wines for $15, or $20 for the drier premium flight, and the gelato pairing matches four sparklings to four flavours kept a mystery until you taste them. Cheese plates can be added when you book a seated sitting. Restaurant Cuvee sits under the same sandstone roof and serves breakfast and lunch seven days, so this works as a first stop on the drive in, and it is where Balloon Aloft's sunrise flights meet and finish. It is a genuinely different tasting in a region built on Semillon and Shiraz.
