Established1988

Pooles Rock pours on the historic Post Office Vineyard, ringed by Hunter Shiraz vines planted in the 1890s that go into the flagship Pooles Rock Shiraz. David Clarke established the label in 1988 under the name Cockfighter's Ghost, and both ranges are poured here, alongside museum releases and wines sold nowhere else.

The $20 Premiere tasting is the way in, and it steps up to a $55 Taste of the Hunter with local produce and a $120 behind-the-scenes experience for anyone who wants to go deeper. The White House, a three-bedroom federation cottage on the vineyard with a wraparound veranda, is a short walk from the tasting room. It opens daily, 10am to 5pm, closed Christmas Day and Boxing Day. The old-vine Shiraz is the reason to come: there is not much fruit this age left in the valley.
