Saltire is a family-owned estate on Wilderness Road at Lovedale, working vines that were part of the George Hunter Estate planted in the 1970s, and it leans hard into a Scottish story, with wines called The Selkie, The Wulver and The Blue Men of Minch. The list is long, taking in Vermentino, Gamay, Graciano and a Prosecco alongside the Hunter staples.
The signature flight is seven wines for $15 across an hour, and there are four other ways in: a cheese pairing at $25, a wine cocktail flight, a craft beer flight poured from local Maltnhops Brewhaus, and Sip and Solve, ninety minutes of premium reds with sensory kits for $90. You choose your room when you book, from the vat-side Tartan Lounge to the open-air Glen Deck, where resident kangaroos graze the hill. It opens seven days, 10am to 4pm, with groups of eight or more by arrangement.
