Carillion pours at Tallavera Grove on Mount View, where the cellar door looks down over the family vineyard and out across the valley. The range runs well past the Hunter classics: alongside Semillon, Chardonnay and Shiraz you will find Italian varieties like Aglianico, Sagrantino, Fiano and Verduzzo, most made in batches of a couple of hundred cases.

Tastings are guided, and the fee is waived if you buy wine, so check the amount on arrival. There is a dedicated Italian tasting of three whites, three reds and a fortified for anyone who wants to follow that thread. Dogs are welcome indoors and out, and Bistro Molines, the French bistro on the estate, will send plates over to the tasting or seat you next door. The Davis family grows the fruit and Andrew Ling makes the wines. The cellar door opens Monday and Thursday to Sunday, up on Mount View away from the Pokolbin crowds.
