Noyce Brothers pours in the front room of Grays Inn, a nineteenth-century sandstone Georgian building in the middle of Wollombi village, next door to the general store. The range is unusually wide for a small label: Shiraz, Semillon and Chardonnay alongside Fiano, Sangiovese and reds running to Malbec, Tempranillo and Graciano.

Michael and Phillip Noyce have farmed the old Byora property in this valley for five decades, and the Sawman Wine Club is free to join and takes ten per cent off a case. No tasting fee is published, so ask at the bar. It opens Monday and Thursday to Sunday, with Tuesday and Wednesday by appointment. The best part is upstairs: ensuite rooms directly above the cellar door, so you can taste the reds properly and walk up to bed rather than drive back over the range.
