Tintilla Estate is a single boutique vineyard high on Hermitage Road, and the thing it does that its neighbours do not is Italian: Sangiovese planted on chocolate clay over limestone, made both as a Super Tuscan-style blend with Merlot and, in the best years only, as the straight Saphira. There is also Hunter Semillon off a one-hectare block by a tributary of Rothbury Creek, an unoaked, early-picked, free-run style.

Tastings are seated and start at $13 for four wines, rising to $17 for eight and $25 for eight with cheese and olives. The estate grows and cures its own olives, so an olive tasting at $14 a head, or a $27 olive plate for two, can sit alongside the wine. It opens six days, closed Wednesday, with groups capped at eight and dogs welcome. If you have tasted your way through Semillon and Shiraz and want something different, the Sangiovese is the reason to climb the hill.
